Two Ingredient Piña Colada Popcicles

I love popsicles, and since we are full on into popsicle season I think it’s time for a recipe. Although, full disclosure…I will eat them all year round. These piña colada popsicles are super easy, have only two ingredients, no added sugar and are delicious. All wins in my book!

I use fresh pineapple for these, but canned or frozen pineapple should also work just fine if you don’t have fresh. I like the sweetness of these, but they aren’t super sweet so you can add your favorite sweetener if you wish. And of course you can add some rum if you want them to be “real” piña colada popsicles. Just sayin’ ;)

Ingredients
  • 1 14oz can coconut milk
  • 3 cups chopped pineapple
Directions
    1. Blend coconut milk and pineapple in a blender until mostly smooth (its ok if there are small chunks of pineapple)
    2. Freeze in popsicle molds overnight.
