My Trip to Paris

If you follow me on social media, you know I was recently on a trip to Paris. It was amazing! Such a fun, beautiful, bustling city. We rented an amazing Airbnb apartment. The building was built in the 17th century and was in Les Marais (which I would definitely recommend to anyone looking for an area to stay). We did some touristy stuff (museums, eiffel tower, etc.) but my favorite part was just walking around the city…looking in store windows, sitting at cafΓ©s sipping coffee, strolling through open air markets. We also did a day trip to Normandy which I really enjoyed. We toured some historical WWII sites, and the countryside is beautiful. Here are some photos from our amazing trip.

Pecan Pie Oatmeal

Pecan Pie Oatmeal
Happy Pi Day! I thought about celebrating by doing math, but instead I decided to have pecan pie oatmeal for breakfast. It just seemed more fun (not that math can’t be fun). This is super simple to make but is so ooey gooey and delicious. It really is a treat! And while it may not be the healthiest breakfast in the world, just think of it this way…it is much healthier than eating actual pie for breakfast. That’s how I will justify it ;)

Pecan Pie Oatmeal

Ingredients

Serves 2

    Oatmeal:

  • 2 cups Water
  • 1 cup Old Fashioned Rolled Oats
  • Pinch of Salt
  • 1/2 tsp Cinnamon
    Pecan Topping:

  • 2 tbsp Butter
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 1/2 cup Pecans
Directions
      Oatmeal:

    1. In a medium pot, bring the 2 cups of water and pinch of salt to a boil. Once boiling, reduce heat to low.
    2. Stir in oatmeal and cinnamon, and simmer until oatmeal is cooked to desired consistency (about 5 minutes)
      Pecan Topping:

    1. In a small saucepan, melt butter over low heat.
    2. Remove from heat and stir in brown sugar and honey until sugar is melted.
    3. Stir in pecans.
    4. Pour over oatmeal
